Easy Fiesta bowl Recipe

I say this you deter you from calling it a taco salad to your kids (unless they like salad of course). We all have those days, you get home late, you’re tired,  your kitchen isn’t ready for a photo shoot and the wonderful question comes up.. again,  what’s for dinner mom? Or maybe you’re trying to get your kids to eat a salad and they refuse to do it because of the icky name attached to it,  salad… gross!  Try calling it confetti,  you can’t have a fiesta without confetti,  can’t you!?  It will sound way more exciting when they ask what the green stuff is. My fiesta bowl will take about 20 minutes to make total,  woohoo!  It is yummy for the tummy and packed with goodness (at least it tastes that way).

Now what you’ll need: (serves 4)

  • 1 lb ground lean turkey (preferred) or ground beef.
  • 1 bag of Dole fiesta chopped salad mix
  • 1 can of corn
  • 1 can of pinto beans
  • Tortilla chips
  • 1 stick (organic preferred) Butter
  • Mexican blend cheese

Seasonings:

  • 1 TBSP paprika
  • 1 TSP All purpose seasoning
  • Salt
  • Pepper
  • Garlic powder

Seasoning the meat:

  • Heat on med-high until fully cooked. Add the paprika and all-purpose seasoning.  For the ground turkey you’ll know you have added enough paprika when it has a nice medium brown color to it (usually around 1 TBSP).
  • Add 1 tsp of all-purpose seasoning.
  • 1/4 tsp salt
  • 1/2 tsp pepper

Heating and seasoning the corn:

  • Add can of corn into a small pot and heat while your meat is cooking on a med-low. Stirring occasionally.
  • 1/4 stick of butter
  • 1/4 tsp of salt
  • 1/4 tsp pepper
  • 1/4 tsp of garlic powder

Heating and seasoning the pinto beans:

  • Add can of beans into medium pot and also heat while your meat is cooking, on a med level. Stirring
  • occasionally. Your beans will be done when they are softened and can easily mush.
  • 1/4 stick butter
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder

After everything is fully cooked and heated prepare in a bowl as followed:

  1. Salad mix    
  2. 1 scoop Meat (3/4 cup)
  3. 1 scoop beans (1/4 cup)
  4. 1 scoop corn (1/4 cup)
  5. Cheese sprinkled on top
  6. Tortilla chips crumbled   
  7. Chipotle ranch the dole mix comes with (add more regular ranch if you like heavier dressing)
  8. Present to kids as stated above then mix it up for them (or let them mix it) and they won’t know they’re eating salad!
