QUICK and EASY | a MUST TRY Protein Pancakes Recipe

Breakfast is always a great time to enjoy, you have all the yummy fixings like bacon, eggs, pancakes, toast, orange juice, maybe a mimosa or three, it’s a fun time of the day! Everyone (generally speaking) loves a good brunch or breakfast but it usually comes at a cost of not eating as healthy as we normally would. Most people love a good stack of pancakes, I mean I know I do and this is my calculated research of that statement.

I have my Bisquick in the pantry, but I don’t use it but maybe once in awhile because I feel so guilty about eating pancakes! Now though, now I don’t have to. I found a recipe that tastes like some good pancakes and I wouldn’t know they were good for me! The cool thing about using protein powder as a pancake mix is there are a ton of flavors! I generally use vanilla but I mean if you wanted chocolate chip pancakes…just use chocolate mix. You want peanut butter banana pancakes, use a peanut butter or a banana mix! Simple!

Here is a general and EASY recipe you can whip up in 10 minutes or less depending on what your Jedi skills are in the morning. Mine are probably a solid 9…after coffee. Before coffee, girl I can’t even (expresses way overdramatic hand to forehead and throws head back whoah).

What you will need: (makes 4ish pancakes)

  • Protein Powder- I usually will use a whey 0carb protein but for the picture I have a Muscle Milk
  • Almond milk (or milk of choice)
  • Oats
  • 2 eggs
  • Cinnamon
  • Baking powder
  • Vanilla extract (optional)
  • Blueberries or whatever fruit you want if you want a fruit/ extra yummy treat (optional)
add liquids first (can you see the smiley face?)
then add everything else as described

Mixing:

Add into a mixing bowl your 2 eggs and 1/3 cup of milk and whisk until mixed

Add in 1 ½ scoop protein powder of choice, 1/3 cup of oats, 1/4 TSP cinnamon, ¼ TSP baking powder and mix in

Optional items 1/3 cup fruit of choice and ¼ TSP vanilla extract

Mix all ingredients together and put aside

Heat up your frying pan and spray with some PAM or cooking oil of choice and pour in about a 1/3-1/2 cup of your pancake mix. Cook like a regular pancake until your desired choice of pancake color. These do tend to cook a little faster usually about 1-2 minutes on each side at a medium heat and they are good to go for me. Should make 4 medium sized pancakes.

Ya’ll that’s it. That is ALL you need to do to have a delicious no guilt pancake breakfast. They pair great with turkey bacon and eggs…and mimosas. 😊 I’ll be posting some other EASY and SIMPLE healthy recipes throughout the month like a healthy Reese’s alternative!
